Yes, coverage is fine for Ibiza although top ups can be more difficult to find onthe isalands. The global SIM is also a good option and that can be topped up on-line.

Please can you confirm if it is an Optus SIM or a Virgin SIM you have?

It depends on each SIM card but the global SIM is valid ongoing as long as a call is made every 6 months.
